Step 1 Melt the butter in a skillet and fry the onion for about 5 minutes. Step 2 Add the mushrooms to the onion and fry for another 5-7 minutes, then add potatoes. Step 3 Transfer the content of the skillet into a saucepan. Add 2 tbsp. of flour and mix well. Then slowly pour in the vegetable broth, stirring constantly, so that there are no lumps. Add salt and pepper. Cook for about 20 minutes. Step 4 Pour the soup into a blender bowl and grind well until smooth. Return to the saucepan, add cream and bring to a boil. Step 5 Pour the hot soup into bowls, sprinkle with parsley or dill. Bon Appetit!
