This yummy almond croissant recipe is really simple and perfectly diabetes-friendly. Your family and friends will be impressed once you treat them to this dessert.
Ingredients:
Almond flour – 1 cup
Baking powder – 1 tsp.
Sliced almonds (slightly crushed with your fingers) – 1 tbsp.
Step 1 Put the cream cheese and mozzarella cheese into a microwave safe bowl and heat in a microwave oven at half a minute intervals until the cheeses are completely melted and combined well. Step 2 Add the almond flour, baking powder and salt to the mixture of cheeses. Knead with your hands until a dough has formed. Step 3 Put the egg into a mixing bowl with the dough, and beat with a hand mixer on high until the egg is well incorporated into the dough. Step 4 Put the ready dough in a freezer for half an hour. Then remove from the freezer, put between two pieces of baking paper and roll out until the dough is about a quarter of an inch thick. Step 5 Use a sharp knife to cut the dough into 8 large triangles. Step 6 Starting at the furthest end, roll the dough triangles down until they form a shape of a crescent. Step 7 Preheat oven to 350 F. Put the croissants on a baking sheet covered with baking paper or silicone mat. Press the sliced almonds firmly into the top of the croissants. Bake until golden brown (about 20 minutes). Step 8 Remove the croissants out of the oven, brush the melted butter over the top of the hot croissants and serve. Enjoy!
