Cauliflower baked with ground beef is a hearty diabetic-friendly dinner entrée that is equally great for every day as well as for a special occasion meal.
Step 1 Divide the cauliflower into inflorescences. Then put it in a large saucepan with salted cold water and leave for 15 minutes. Step 2 Put the cauliflower in another saucepan with boiling water for about 7 minutes, then remove it from the water and cool. Step 3 Heat a little vegetable oil in a frying pan. Fry the onion for about 5 minutes, add the chopped garlic clove, stir, and keep frying for about half a minute. Step 4 Remove the pan from heat and cool its content slightly. Step 5 In a bowl, combine the ground meat, onion with garlic, egg, grated raw carrots, salt, pepper and paprika. Mix well. Step 6 Form a large ball out of the ground meat and put it in a baking dish greased with vegetable oil. Step 7 Carefully insert the cauliflower inflorescences into the minced meat, imitating a whole head of cauliflower. Step 8 Spread slightly salted sour cream over the cauliflower. Sprinkle with paprika. Step 9 Preheat oven to 355 F. Bake the dish in the oven for 50 minutes if you are cooking beef or pork. If you are cooking chicken, bake the dish for 35-40 minutes. Step 10 About 5 minutes before the dish is ready, sprinkle the cauliflower with grated cheese and chopped dill and parsley. Put the dish back to the oven to melt the cheese. Step 11 Remove the ready dish from the oven, let it stand for about 15 minutes. If liquid has formed, drain it. Step 12 Remove the dish from the baking dish. The dish can be served hot or cold.
