Step 1 Peel zucchinis, eggplants, tomatoes, and cucumbers and then cut them into large cubes. Put the vegetables in a baking dish. Step 2 Mince the garlic and add it to the baking dish with the vegetables along with oregano, turmeric, and basil. Drizzle the contents of the baking dish with olive oil. Step 3 Preheat oven to 350 F. Bake the vegetables for 20 minutes. Step 4 Take the vegetables out of the oven, add salt and mix well. Step 5 Put the vegetables back in the oven for 30 more minutes.
