Step 1 In a frying pan, lightly fry the zucchinis in olive oil until half-cooked. Step 2 In a sauce pan, lightly fry the parsnip root. Then add garlic and continue frying. Step 3 Add the half-fried zucchinis to the sauce pan with parsnip and garlic and keep frying for a minute. Step 4 Add the beans to the sauce pan. Cover with water. Then add sea salt. Step 5 Knead the beans a little to make it a bit thicker. Cook for 10 more minutes. Step 6 Remove the sauce pan from the heat and let the soup sit for 10 minutes. Step 7 Serve the soup, adding chopped parsley and grated cheese on top in each plate. Bon appetit!
