Step 1 Melt 1 tbsp. of butter in a frying pan over medium heat. Add shallots and sauté until tender (about 4 minutes). Step 2 Add sweetener to the frying pan and stir for 1 minute. Step 3 Add the beef broth and chicken broth and then add cognac. Bring to a boil and cook until reduced to ½ cups (that will take about 20 minutes). Then stir in the cream. Step 4 Cut the beef into 2 steaks. Season with salt and pepper. Melt 1 tbsp. of butter in a skillet over medium heat. Add the steaks and cook for 4 minutes on each side, then put on plates. Step 5 Bring the sauce to a boil, season with salt and pepper. Step 6 Cut the meat into small pieces, pour over the sauce and sprinkle with chopped chives. Serve and enjoy!
