Beef Stroganoff is a tender beef with mushrooms in sour cream sauce – a gourmet, diabetic-friendly dish that can be a great treat for the entire family.
Ingredients:
Beef filet mignon – 1.5 lb.
Sliced mushrooms (can use champignons or other mushrooms you prefer) – 0.5 lb.
Step 1 Heat olive oil in a large frying pan. Step 2 Cut beef to medium pieces and fry on both sides until golden brown. Take the beef off the heat. Step 3 Heat some olive oil in another frying pan. Put the chopped onion in there. When onion become golden, add the sliced mushrooms and a pinch of salt. Fry for 10 minutes until all liquid evaporates. Step 4 Add the cognac and beef stock to the frying pan with the mushrooms. The liquid should cover mushrooms just a bit. Simmer for about 15 minutes, then reduce heat to low. Step 5 Add sour cream, Dijon mustard, salt and pepper to the frying pan with the mushrooms and stir well until the content becomes creamy white. Step 6 Add beef, mix well, and cook for about 2 minutes. Then add dried dill and serve hot with a side of your choice. Enjoy!
