Buckwheat is a very healthy and diabetic-friendly product. In this recipe, we are adding some lean pork to make the dish juicier and more flavorful.
Ingredients:
Buckwheat (washed and dried before cooking) – 2 cups
Step 1 Pour 1 tbsp. of oil into a pan in which you are going to cook the dish. When the oil warms up, put in the meat and stew for 20 minutes over low heat. When first 10 minutes pass, add salt, pepper and spices. Then stir the meat well, close the lid and stew for 10 more minutes. Step 2 While the meat is stewing, heat a cast iron skillet. Put the buckwheat into the skillet. Add butter and some olive oil and fry for about 15 minutes over a medium heat. Step 3 On a very hot frying pan pour 2 tbsps. of olive oil. Put in the onion and fry until golden brown. Then, add the fried onion to the pot with meat. Step 4 Add the fried buckwheat to the meat and then add cold water so that it covers the content of the pot by a bit less than half an inch. Close the lid and bring to boil. Step 5 Reduce heat and simmer for about 20 minutes. Serve hot and enjoy!
