Here is an easy to make recipe for a delicious diabetic-friendly dish made from healthy cauliflower, delicious and tender zucchini with amaranth flour.
Step 1 Divide the cauliflower into inflorescences. Step 2 Put the cauliflower and zucchinis into boiling salted water. Add some peppercorns. Cook the cauliflower and zucchinis until tender and then put them on sieve to drain the water. Step 3 Heat the amaranth flour in butter in a skillet. Gradually pour in sour cream and add tomato paste and garlic, while stirring constantly. Mix everything well. Step 4 Put the cauliflower and zucchini in the frying pan with the sour cream and tomato sauce. Salt and cook for 4-5 minutes. Step 5 Sprinkle with dill before serving. Bon appetit!
