Recipe Details:
This classic French dish, which is a cone-shaped pile of cream puffs, is hard to believe to be good for diabetics. However, if the ingredients are right and if consumed in moderation, these delicious dessert can be made diabetes-friendly.


Ingredients:
  • Turkey bacon slices – 4 cuts
  • Truvia natural brown sugar alternative - Equivalent to 1 cup of brown sugar
  • Bourbon – 1 tbsp.
  • Butter for sauce (unsalted) – 0.5 cup
  • Low-fat milk – 0.25 cup
  • Powdered sweetener (for decoration)
  • 9” Styrofoam cone – 1
  • Toothpicks
  • Coconut flour – 1 cup
  • Almond flour – 1 cup
  • Large egg – 1
  • Baking powder – 1 tsp.
  • Stevia extract powder – 0.5 tsp.
  • Butter for doughnuts – 2 tbsp.
  • Water – 1 cup
    Recipe Directions:
    Step 1
    Heat a large skillet and fry bacon on it until it gets crispy. (That may take about 5 minutes per side.) Then put the bacon on a plate lined with a paper towel and break by hand into small pieces.
    Step 2
    In a medium size saucepan, combine milk, butter, and Truvia brown sugar alternative. Bring to boil over medium-high heat and cook, while stirring often, until the sweetener is dissolved.
    Step 3
    Remove the saucepan from heat and stir in bourbon. Then set the ready caramel sauce aside.
    Step 4
    Pour 1 cup of water into a medium saucepan. Add butter and bring to boil. Then take off the heat and let it rest for 3 minutes.
    Step 5
    In a medium bowl, combine almond and coconut flours, baking powder, and stevia extract powder. Wisk thoroughly until the ingredients a mixed well.
    Step 6
    To the mixture of the dry ingredients add the water with butter and the egg. Stir well until the batter starts looking like dough and will be soft but firm.
    Step 7
    Wet your hands with oil or water and make balls 2-inch in diameter.
    Step 8
    Preheat the oven to 375 F. Cover a baking sheet with baking paper, and place the doughnuts on the baking sheet. Bake the doughnuts until they become golden (about 15 minutes).
    Step 9
    Remove the doughnuts from the oven and let them cool for 7 minutes.
    Step 10
    Using a toothpick, attach the doughnut holes onto Styrofoam cone. Begin attaching the doughnut wholes from the base and continue to the top of the cone.
    Step 11
    Place the bacon pieces into the gaps between the doughnuts, then pour the caramel sauce over the doughnut whole cone. Garnish with the powdered sweetener, serve and enjoy!
