Casseroles are one of the most common classic comfort foods out there. They are hearty, nutritious, and simply delicious, but most importantly, casseroles are very versatile. – You can combine a broad variety of ingredients, coming up with numerous different dishes that are not only tasty, but diabetes-friendly as well. Just pick your ingredients wisely and bake them together in a casserole dish!

Ingredient selection is what makes the difference for people with diabetes between pure enjoyment and weight gain or blood sugar spike. You should avoid casseroles that are made with fatty meats, excessive amount of cheese, and creamy sauces. Instead, stick with casseroles that contain such ingredients as lean meats (turkey, chicken breast, fish, and lean beef or pork), low fat cheese, vegetables, beans, brown rice and whole grain pasta. If the recipe you’re cooking has cheese or breadcrumbs in it, make sure to use whole grain breadcrumbs and low fat cheese to minimize carbs and calories consumption.
