If you like Shepherd’s Pie, you most likely will enjoy this healthier, diabetic-friendly version of it. And the addition of mushrooms makes this dish even more attractive.
Step 1 Put dry mushrooms into a small bowl and cover with 1 cup of water. Leave the mushrooms in water for 30 minutes. Step 2 Heat 1 tbsp. of oil in a large skillet. Put the chopped cabbage in there and fry for 7 minutes while stirring. Step 3 Add half a cup of water to the cabbage and simmer over low heat for 10 minutes. Step 4 Remove cabbage from the skillet and heat 1 tbsp. of vegetable oil there. Then, add the chopped onion. Fry until golden brown. Step 5 Add the ground beef to the skillet and cook for 10 minutes (until brown), stirring occasionally. When the beef is ready, put it in a different container. Step 6 Wash the mushrooms chop them finely. Step 7 Cover a baking dish with oil and put half of the cabbage, meat, mushrooms, and the second half of the cabbage in layers. Step 8 Make the sauce: Beat the eggs with sour cream. Then add cheese, salt, pepper and mix well. Evenly pour the sauce over the contents of the baking dish. Cook the casserole at 390 F, about 20 minutes. Serve hot and enjoy!
