Ingredients:
Reduced fat sausage (cut in ¼” slices) – 1 lb.
Chicken breast (boneless & skinless, cut in pieces) – 2 lbs.
Step 1 Prepare the flour: Preheat oven to 400 F. Put the flour on a baking sheet and bake for 20 minutes, while stirring every 10 minutes, until the flour gets nutty brown, and set aside. Step 2 Grease a large nonstick pot with cooking spray. Add sausage and stir-fry it until crispy brown over medium heat. Then set aside and remove any excess grease. Step 3 Grease the pot with nonstick cooking spray again. Add chicken and cook while stirring until it starts to brown. Step 4 Add the onion, bell pepper, celery, and garlic. Cook the content of the pot until the chicken is tender, then stir in browned flour, while stirring continuously. Step 5 Gradually add the chicken broth, okra, cayenne, and thyme. Step 6 Bring the content of the pot to boil, then lower heat and simmer for half an hour. Step 7 Add sausage and scallions. Cook for another 5 minutes. Serve and enjoy!
