Very tasty and diabetic-friendly appetizer that is good for any lunch and dinner. Large Portobello mushrooms would be the best choice for this dish, although other mushrooms of your choice can be used as well.
Step 1 Cut aluminum foil into squares big enough to wrap one mushroom and cover each sheet of aluminum foil with olive oil. Step 2 In a deep medium bowl, mix together the chopped garlic, herbs, and olive oil. Add salt and pepper to taste. Step 3 Dip each mushroom into the mix one by one, then place them on aluminum foil. Step 4 Add some herb mix on the mushroom, then put a bit of cheese, such as parmesan, on top. Step 5 Close aluminum foil above each mushroom and put them on the grill for about 15 minutes until ready. Step 6 Take the mushroom off the grill, take out of the aluminum foil, serve and enjoy!
