Step 1 Cut the onion into cubes and fry until it becomes soft in 1 tbsp. of oil. Step 2 Add flour to the onion and continue frying for 2 minutes. Put it aside on a plate. Step 3 Dice the eggplant. Pour the remaining 1 tbsp. of oil into the frying pan and fry the diced eggplant until it half-cooked. Step 4 Boil some water and pour it over the tomatoes. After that, remove the skin from the tomatoes, cut them into cubes and add to the eggplant. Step 5 Add the fried onion to the eggplant and tomatoes. Salt the vegetables and cook, while constantly stirring for approx. 3 minutes. Step 6 Grease a baking dish with some vegetable oil put the contents of the frying pan there. Step 7 Preheat the oven to 355 F. Beat eggs with salt, then add milk and ground pepper and then add the mix to the baking dish with the vegetables. Bake the dish for about 20 minutes or until the top grabs. Serve and Enjoy!
