Ingredients:
Pork – 2 lbs.
Champignon mushrooms (you can use any mushrooms of your choice) – 2/3 lb.
Cheese (coarsely grated) – 1¼ cups
Garlic – 2 cloves)
Medium onion (cut into half-rings) – 1
Parsley and dill (finely chopped) – ½ bunch of each
Step 1 You will need a thin and wide slice of meat (like a sheet of paper), so you can roll stuffing in it. Then you will need to beat the meat with a meat hammer and season with salt and pepper on all sides. Step 2 Heat some vegetable oil in a frying pan. Cut the mushrooms into medium pieces, mix them with onions, and fry for about 10 minutes, until all the liquid from the mushrooms has evaporated. Season with salt and pepper. Step 3 Mix the fried mushrooms with finely chopped parsley and dill, minced garlic and grated cheese. Step 4 Place the mushroom mix on one end of the meat. Roll up the filling into the meat and fasten the meat with a thread or toothpicks, so it doesn’t open. Fry the roll on all sides in vegetable oil until golden brown and then put in a baking dish. Step 5 Preheat oven to 360 F. Cover the baking dish with foil and bake in the oven for 1 hour, then remove the foil and cook for 20 more minutes. Cut into pieces and serve hot, warm or cold.
