Ingredients:
Uncooked medium shrimp (peeled and deveined) – 25-30
Step 1 Heat the olive oil in a nonstick frying pan over medium-high heat. Step 2 Put in the shrimp and cook while stirring until pink. That can take about 4 minutes. Then put the cooked shrimp to a bowl and set aside. Step 3 Add the onion and bell pepper into the frying pan and cook for about 5 minutes until onion is translucent. Add the mixture of pepper and onion to the bowl with shrimp and set aside. Step 4 Place tortillas, 1 at a time, into a clean frying pan and fry over medium-low heat until they brown a little. Step 5 Divide the shrimp mixture into 5 portions. Put each portion of the shrimp mixture down the center of each tortilla, roll up the tortillas, and put them into a baking dish. Step 6 Place 1 tbsp. of enchilada sauce on each tortilla. After that, evenly sprinkle the tortillas with the mozzarella and cheddar. Step 7 Preheat the oven to 350 F. Pu the baking dish in the oven and bake until cheese melts (about 15-20 minutes). Then, remove the dish from the oven, let it cool a bit, serve and enjoy!
