To make a great diabetic-friendly side dish from zucchini, bell pepper, and tomatoes, all you need is to stew them together with some seasoning to bring out their best flavors.
Step 1 Heat a little olive oil in a wok, then put in the zucchinis and finely chopped chili pepper. Fry for about 5 minutes, stirring frequently. Step 2 Add the bell pepper and continue frying and stirring often. Step 3 After about 2 minutes, add the onion and, stirring often, fry for 2 more minutes. Then add the tomatoes and cover with a couple of pinches of dried basil and other spices. To prevent the tomatoes from letting in a lot of juice, remove the wok from the heat and continue to stir. Step 4 In one minute, the dish is ready. Now add salt and pepper, serve and enjoy!
