These diabetic-friendly rolls don’t have any rice, but have a very distinct flavor!
Ingredients:
Smoked salmon (cut into small pieces) – ¾ lb.
Zucchini – 3
Dill (finely chopped) – 1 bunch
Avocado Oil Mayonnaise – 5 Oz
White wine vinegar – 3 tsp.
Salt and ground black pepper – to taste (optional)
Step 1 Cut the zucchinis into thin slices and grill until they become soft and flexible, then put a on a plate. Step 2 In a small bowl, combine 2/3 of the chopped dill, mayonnaise, and vinegar. Season with salt and pepper if desired. Step 3 Combine the smoked salmon, the rest of the chopped dill, and 0.25 cups of the mayo and dill sauce. Step 4 On each piece of zucchini, put 1 tbsp. of the fish mixture and wrap in a roll. Place on a plate and serve.
