Recipe Details:
Treat your family and guests with this juicy, flavorful and diabetic-friendly bean and beet burger. Just make sure you have enough ingredients because they will be asking for more!
Step 1 Preheat oven to 395 F. Peel the beetroots, wrap them in aluminum foil, and bake in the oven for 50 minutes. Step 2 Cook the brown rice: Rinse the rice, then put it in a saucepan and cover with 1 cup of water. Bring the water to a boil and reduce the heat. Cover the saucepan with a lid and simmer until the brown rice has absorbed the water and become tender (about 50 minutes.) Step 3 Heat some vegetable oil in a frying pan and fry the onions until soft, then add garlic and fry for a minute. Step 4 Add apple vinegar into the mixture. Simmer everything until the vinegar evaporates. Step 5 Put the oats, beans, and prunes in a blender and grind until smooth. Step 6 Grate the baked beetroots. Get rid of excessive juice. Step 7 Combine all the ingredients and mix them together in a blender. Season with salt and pepper. Step 8 Put the resulting mass in bowl. Cover the bowl with plastic wrap and put in a fridge for 4 hours. Step 9 Remove the bowl from the fridge. Make 6 burgers out of the mass. Fry the burgers until tender. Step 10 Warm the buns in the frying pan, over medium heat, for a few minutes. Step 11 Make the burgers with toppings of your choice (such as lettuce, tomatoes, cucumbers, pickles, onions, Greek yogurt, mozzarella cheese, Cheddar cheese, etc.) Serve and enjoy!
