The diabetic-friendly beet burger is a very flavorful and hearty alternative to traditional beef burger that will give you a highly satisfying experience!
Step 1 Thoroughly wash the beetroot, peel it and grate on a coarse grater. Step 2 Preheat oven to 320 F. Put the chopped mushrooms and grated beetroot on a baking sheet in one layer. Bake for 15 minutes, then remove the beets and leave the champignons for 20 more minutes. Step 3 Pour 3 tbsp. of water into a glass and add chia seeds. Wait 20 minutes for the seeds to absorb the water. Step 4 Grind the tofu in a blender, then add the cooked mushrooms to it, along with cumin, paprika, salt, garlic, soy sauce, and lemon juice. Mix until smooth. Add the sliced sun-dried tomatoes, chia seeds and beets to the mass and grind everything in the blender again. Step 5 Form 4 burger patties from the mass and bake for about 20 minutes at 320 F. Step 6 Warm the buns on the frying pan, over medium heat, for a few minutes. Step 7 Put a beet burger on the bottom bun, add toppings to taste, and cover with the top bun. Serve and enjoy!
