This is an awesome vegie burger that is diabetic-friendly and perfect anyone sticking to a vegetarian diet.
Step 1 Cook the couscous: Put couscous in a small saucepan, add water to cover, bring to a boil, and simmer over low heat for about 13 minutes so that the couscous absorbs the liquid. Step 2 Place the broccoli in the microwave oven for about 5 minutes and cook until half cooked. Step 3 Heat olive oil in a frying pan and sauté the chopped scallion for 4 minutes. Then stir in the cumin. Step 4 Put the broccoli, chickpeas, couscous, scallions, and sesame oil in a blender and grind until smooth. Step 5 Form 4 burgers, roll patties, roll in bread crumbs and fry in olive oil in the frying pan until tender. Step 6 Warm the buns on the frying pan, over medium heat, for a few minutes. Step 7 Make the burgers with toppings of your choice (such as lettuce, tomatoes, cucumbers, pickles, onions, Greek yogurt, mozzarella cheese, Cheddar cheese, etc.) Serve and enjoy!
