This is a recipe for a perfect diabetic-friendly one-dish meal for the whole family.
Ingredients:
Chicken drumsticks – 1.5 lb.
Tomatoes (cut into cubes) – ½ lb.
Cherry tomatoes – ½ lb.
Bell pepper (cut one into cubes, another into medium strips) – 2
Step 1 Salt, pepper the drumsticks and fry them until golden brown in a frying pan. Then put the drumsticks on a greased baking sheet. Step 2 In the frying pan where the drumsticks were fried, fry the onions, then add the tomatoes and peppers in cubes. Cook for 5 minutes over high heat. At the end, add garlic and leaves of 1 sprig of rosemary, salt and pepper. Step 3 Put the fried vegetables over the chicken drumsticks. Top with strips of pepper, whole cherry tomatoes and 2 sprigs of rosemary. Step 4 Preheat oven to 395 F. Bake the dish for 30 minutes. Then remove from the oven, serve hot and enjoy!
