This is a diabetic-friendly version of the traditional Irish stew. The dish is amazingly rich in flavor and super tender.
Step 1 Heat the oil in a heavy-bottomed saucepan and fry the beef in it until golden brown. Step 2 Add the garlic to the meat and cook for a minute. Step 3 Add the beef broth, water, wine and beer to the meat. Then add thyme, sweetener, tomato paste, Worcester sauce, and salt. Mix well, bring to boil, and simmer over low heat for 1 hour, stirring occasionally. Step 4 Heat some oil in a frying pan, put the onion and carrot and fry until golden brown. Step 5 Add diced potatoes and fried vegetables to the meat, salt and pepper, cook for 40 minutes or until the potatoes are tender. Step 6 Serve the stew sprinkled with chopped herbs. Enjoy!
