Step 1 Peel the zest off of the orange and lemon. The squeeze the juice from the fruits. You may use the juice from half the lemon to make the meat less sour. Step 2 Mix the juices in a deep bowl, add the minced garlic then put in the meat and leave to marinate for 20 minutes. Step 3 Heat some vegetable oil in a frying pan and simmer the meat with the marinade and lemon and orange zest, covered, for 40 minutes over low heat under. At the end, add salt and pepper.
