Stewed cabbage with potatoes is a diabetic-friendly, nourishing and tasty universal side dish to poultry or meat. Because the dish doesn’t contain any meat, it can be a great independent dinner entrée for fasting and vegetarians.
Step 1 Heat vegetable oil in a frying pan. Fry the potatoes until half cooked. Put the potatoes aside. Step 2 Mix the carrots, peppers, and onions and fry in vegetable oil until tender. Step 3 Add the tomato, tomato paste, and a little water. Simmer for 10 minutes, until almost all the water has evaporated. Step 4 Season with salt and pepper. Add the sweetener. Then add cabbage and simmer over medium heat for 15 more minutes. Step 5 When the cabbage is almost ready, add the potatoes to it, reduce heat and cover. Simmer for another 15 minutes. Serve hot.
