If you love sushi rolls, but want to avoid eating too much carbs, this diabetic-friendly recipe is a solution!
Step 1 Whisk eggs with 1 spoon of soy sauce and water. Bake thin egg pancakes and roll them hot immediately into loose rolls. Cool the egg pancakes down. Step 2 Mix cream cheese with salt, and wasabi, if you wish, and form it into strips. Step 3 Spread out the nori leaf and place 2 lettuce leaves on top with edges pointing out. Then put cream cheese on the lettuce leaves. Step 4 On top of the cream cheese, put the egg roll. Then put some more cream cheese on the egg roll and the salmon. Step 5 Place cucumber strips right next to the cream cheese, egg roll, and salmon. Step 6 Moisten the edges of the nori with water, then roll the nori sheet tightly, pressing down on it while rolling. Step 7 Prepare other two rolls the same way. Step 8 With a sharp, wet knife cut off the uneven edges of the roll, then cut the roll into even pieces. Step 9 Place the sushi on a plate, serve with soy sauce and wasabi. Bon appetit!
