Very simple and tasty diabetic-friendly recipe. It takes just several minutes cook, which makes this dish a perfect everyday dinner entrée.
Step 1 Slightly beat each piece of veal with a flat side of the meat hammer, then season with salt and pepper on both sides. Step 2 Using a vegetable peeler, cut the zucchini into long thin strips. Step 3 Heat a tablespoon of vegetable oil in a frying pan and fry the meat for 15 seconds. Add the port, turn the veal and fry for 15 more seconds. Step 4 Preheat oven to 355 F. Put the mozzarella slices on each piece of veal and then put the pan in the oven for five minutes. (the cheese should melt). Step 5 Pour vegetable oil into another frying pan and put tomato slices. Stir them a little, add zucchini and garlic oil. Fry for 1.5 minutes. Season with pepper, remove from heat, and sprinkle with mint. Then shake the pan a little to mix the vegetables. Step 6 Put the fried tomatoes and zucchini on a plate and add the slices of veal with mozzarella on top. Season the dish with freshly ground black pepper, garnish with mint leaves and drizzle with a teaspoon of olive oil. Serve and enjoy!
