This is a recipe for a delicious and diabetic-friendly artichoke soup, made from the hearts of fresh globe artichokes, cream, and vegetable broth.
Step 1 Chop and fry one chopped onion and garlic in butter. Step 2 Peel the artichokes from hard scales and chop. Boil them in water with a little lemon juice for about 20 minutes. Step 3 Add the artichokes to the frying pan with the onions and garlic, cover and fry for 3 minutes. Step 4 Pour the vegetable broth into a saucepan, add artichokes, onion and garlic, bring to a boil and cook, covered, until vegetables are tender. Grind with a blender to a puree consistency and then sift through a sieve to remove tough artichoke particles. Step 5 Pour the soup again into a saucepan, warm up, season with salt and pepper, pour in half of the cream. Step 6 To garnish the soup, chop and fry 4 onions. Step 7 Pour the soup into bowls, sprinkle with fried onions, pour over the cream and garnish with parsley. Serve and enjoy!
