A new approach to the good-old grapefruit turns an ordinary fruit into a delicious and diabetic-friendly dessert!
Step 1 Cut the grapefruit in half. Step 2 Use a thin knife to separate (but not remove) the grapefruit pulp from the peel, while keeping the grapefruit pulp intact. Step 3 Make a few not very deep knife cuts across the surface of the grapefruit pulp. Do not cut the peel. Step 4 Sprinkle each half of the grapefruit with cinnamon, then pour honey on top of the cinnamon. Step 5 Preheat oven to 300 F. Place both halves of the grapefruit on a baking sheet covered with baking paper. Bake for 20 minutes. If desired, put a small piece of butter on top of each half of the grapefruit before baking. Butter will provide a delicate creamy taste and finish.
