Step 1 Gut the mackerel and remove all fins and tail. Remove all the bones (optional). Salt and pepper the fish inside and outside. Step 2 Fry onion and carrot in butter until soft. Season with salt and pepper. Step 3 Put the mackerel on a sheet of aluminum foil, stuff with vegetables, add chive and bay leaf in each fish. Step 4 Preheat oven to 355 F. Wrap the mackerel tightly in foil, put on a baking sheet and bake for half an hour. Step 5 Take the ready fish out of the oven and serve with any side. Enjoy!
