A great diabetic-friendly recipe for filet mignon. The combination of wine and mushrooms give the meat a unique, delicious flavor.
Step 1 Sprinkle the steaks with salt and pepper. Heat 1 tbsp. of olive oil in a heavy large skillet and when the oil starts sizzling, put the meat in the skillet. Fry the meat over medium heat for 6-9 minutes, turning over once. Step 2 Put the ready steaks on a plate, cover with foil and let it “rest” for a few minutes. Step 3 Pour 1 tbsp. of oil into the same skillet and sauté the shallots in it for about 4 minutes. Add Madeira, a ¼ tsp. of salt, and a pinch of black pepper and cook for 2 more minutes, stirring quickly. Add the cornstarch and mushrooms and, while stirring quickly, let the sauce thicken. This will take about a minute. Step 4 Pour the sauce over the steak, serve and enjoy.
