This is a diabetic-friendly recipe for a hearty and rich beef stew with mushrooms.
Step 1 Put the pieces of meat to a bowl, sprinkle with 2 tbsp. of flour and mix well. Step 2 Melt the butter and olive oil in a frying pan and fry the meat in portions until golden brown. Put the cooked meat on a plate. Step 3 Add the shallots and garlic to the same frying pan. Sauté for 2 minutes over low heat. Step 4 Add whole mushrooms and cook for 2 more minutes. Step 5 Add the wine and beef broth, salt and pepper and mix well. Bring to a boil and add meat. Reduce heat and add thyme sprigs. Cover and simmer for 40 minutes. Step 6 Combine 2 tbsp. of flour and some water in a bowl. Add, stirring, to the frying pan with the beef. Cook for 10 minutes, until the sauce thickens slightly. Turn off heat and leave the stew for about 20 minutes. Then serve and enjoy!
