An excellent combination of boiled beets and fresh crispy apple, complemented by prunes and walnuts gives you an easy to make, healthy, and diabetic-friendly salad.
Step 1 Thoroughly wash the beetroots, put in a sauce pan and cover with water. Bring the water to a boil and boil the beetroots over low heat until cooked through (about 1.5 hours). Then take the beetroots out of the water and cool to room temperature. Step 2 Peel the cooled beetroots and grate them on a coarse grater. Step 3 Rinse the prunes in warm water and cut them into strips. Step 4 Rinse the apples, peel them, and remove the core. Grate the apples on a coarse grater. Step 5 Put the beetroots, prunes, and apples into a salad bowl. Mix well. Step 6 Fry the walnuts in a dry frying pan for 2-3 minutes, chop them into pieces, then add to the salad. Mince the garlic and add to the salad as well. Season the salad with olive oil, add salt and stir. The salad is ready. Serve and enjoy!
