Light and juicy beetroot salad with oranges is a fresh diabetic-friendly addition to your dinner table. The combination of the ingredients gives the salad a balanced and interesting taste that is worth trying!
Step 1 Thoroughly wash the beetroots, put in a sauce pan and cover with water. Bring the water to a boil and boil the beetroots over low heat until cooked through (about 1.5 hours). Then, take the beetroots out of the water, cool to room temperature, peel, and cut into thin slices. Step 2 Peel and clean the orange. Cut the orange into wedges and remove the white film from each wedge, leaving the clean pulp. If the orange is large, cut the each wedge in half. Step 3 Combine beets, oranges, arugula and chopped parsley in a salad bowl. Then, season the salad with olive oil and add salt and black pepper to taste. Stir the salad well. Serve and enjoy!
