Recipe Details:
This flavorful diabetic-friendly dish is a perfect choice for a special occasion, yet it’s quick and easy enough to make for an everyday dinner.
Step 1 Cut the chicken breast, mushrooms, and carrots into small cubes. Step 2 Fry the ingredients in vegetable oil for 10 minutes, then add the tomatoes and cook for 4 more minutes. Then add the chopped dill and stir well. Step 3 Cut the bell pepper lengthwise into 2 halves and stuff with the prepared filling. You can stuff the whole peppers instead of cutting them in halves. Step 4 Preheat oven to 360 F. Put the stuffed peppers in a baking dish greased with olive oil. Pour in a little water into the baking dish. Bake in the oven for 25 minutes. Remove from the oven, serve and enjoy!
