A diabetic-friendly main course of cod fillet with sour cream, mushrooms and white wine – those, who love fish, will appreciate this entrée’s delicate taste and texture.
Step 1 Pour water and milk into a large saucepan and season with salt. Add fish and bring to boil over low heat. Step 2 Turn off the heat and cover the saucepan with a lid and let the fish sit for 10 minutes. Step 3 Put the pieces of fish in a colander and let the broth drain. Step 4 Heat vegetable oil in a frying pan. Add lemon juice and then mushrooms. Season with salt and pepper. Fry the mushrooms for 3 minutes. Step 5 Add sour cream to the mushrooms and after 3 minutes, add wine. Stir and remove from heat in 2 more minutes. Step 6 Put the pieces of cod fillet on a plate and cover with mushroom sauce. Garnish with lemon. Serve and enjoy!
