As most sandwiches, this one is very quick and easy to make. Yet, this sandwich is tasty and filling, which makes it a solid diabetes-friendly breakfast or lunch option for you and your family. You can use home cooked chicken breast (grilled or baked) or chicken breast cold cuts. If using the latter, check nutrition label before buying to make sure that you’re using the products suitable for diabetics.
Step 1 Put the lettuce leaves on slices of bread. Step 2 Put the slices of pickled cucumber on the salad leaves if desired. Then put the slices of tomato on the pickles or o the salad leaves if you chose not to use the pickles. Step 3 Put the slices of chicken breast on the tomato. You can lay them flat or make little rolls out of the chicken slices and then put them on the tomatoes to add some volume to the sandwich. Step 4 Put the slices of cheese on the chicken breast and top it with the slices of bread. Serve and enjoy!
