This diabetic-friendly recipe is not only good for people with diabetes, but for vegetarians as well.
Step 1 Put chickpeas, egg white, croutons, carrots, onion, lemon peel, parsley, garlic, salt, and pepper in a blender. Grind until homogeneous. Step 2 Shape the ready mixture into 4 patties. Step 3 Spray a large nonstick frying pan with cooking spray and heat over medium heat. Put the patties in a frying pan and cook on one side until bottoms are browned (about 5 minutes). Spray tops of patties with cooking spray and turn them over. Cook until browned (also about 5 minutes). Step 4 While cooking the burgers on the second side, warm the buns on another frying pan or in a microwave oven. Step 5 Put the ready burger patties on the buns, add lettuce and tomato. If desired, you can add slices of sweet onion as well. Cover with the second bun (if desired). Serve and enjoy!
