This is an awesome dessert for a special occasion! It’s special in everything – its taste is amazing, it’s easy to cook, and it’s diabetes-friendly as well!
Step 1 Grease two ramekins with butter and dust with a thin layer of flour. Step 2 Set up a double boiler and put in the chocolate and butter in there. Stir often to evenly distribute the heat. Once the chocolate and butter mixture becomes smooth, remove it from the heat. Step 3 Beat the eggs in a mixing bowl until fluffy. Then slowly pour in the melted chocolate while stirring continuously. Step 4 Combine the flour and 2 tsp. of the matcha green tea powder and then add to the eggs and chocolate mixture through a sift. Then carefully fold the flour mixture into the eggs and chocolate mixture until the batter is lump-free and smooth. Step 5 Preheat oven to 425 F. Divide the batter between the two ramekins and bake for 10 minutes. If the outskirt of the cakes became firm, remove the ramekins from the oven and let them sit for 2 minutes. Step 6 Slide a toothpick around the lava cakes and put them on a plate by inverting the ramekins quickly. Sprinkle the remaining matcha green tea powder on the cakes through a sift. Serve and enjoy!
