Ingredients:
Almond flour – 2 2/3 cup
Baking soda – 1 tsp.
Sugar-free chocolate (chopped) – 8 Oz
Sweetener – equivalent of 2 cups of sugar
Salt – 0.5 tsp.
Butter – 1 cup
Low-fat milk – 2.5 cup
Large eggs (at room temperature) – 3
Vanilla extract – 2 tsp.
Butter for the filling (cubed) – 6 tbsp.
Sugar-free chocolate for the filling (chopped) – 4 Oz
Powdered sweetener for the filling – equivalent to 2.5 cup of confectioners' sugar
Heavy whipping cream for the filling – 0.5 cup
Sugar-free chocolate for ganache (chopped) – 10 Oz.
Step 1 Combine milk, butter, and chocolate in a large saucepan and cook over low heat until melted. Then, remove from the heat and set aside for 10 minutes. Step 2 Beat the eggs and vanilla in a large bowl. Stir in the just prepared chocolate mixture until it becomes smooth. Step 3 Combine flour, baking powder, sweetener (equivalent of 2 cups of sugar), and salt and gradually add to the eggs and chocolate mixture. Mix well (the batter will have a thin consistency). Step 4 Preheat oven to 325 F. Grease three 9” round baking pans. Divide the batter between the pans. Put the pans in the oven and bake until a toothpick inserted in center comes out clean. After that, cool the ready cake layers for 10 minutes prior to removing from pans to a wire rack to cool completely. Step 5 Now, let’s make the cake filling. To do that, melt 6 tbsp. of butter and 4 Oz of chocolate in a small saucepan. Then, stir in the powdered sweetener and heavy whipping cream until smooth. Step 6 Now, we’ll make the ganache. Put 10 Oz. of chocolate in a small bowl. Then pour the heavy whipping cream in a small saucepan and bring it just to a boil and pour over chocolate. Whisk the mixture until smooth. After that, cool, while stirring occasionally, until ganache reaches a spreading consistency. Step 7 Finally, let’s assemble the cake. Place one cake layer on a serving plate and spread it with half of the filling. Place the second cake layer on top and spread it with the second half of the filling. Place the third cake layer on top. Then, spread the ganache over the top and sides of the cake. Serve and enjoy!
