Step 1 Peel the melon and remove the seeds. Set aside 1/3 lb. and put the rest to a deep bowl. Step 2 Cut the orange in half, use a spoon to gently remove the pulp so as not to damage the skin. Step 3 Add the orange pulp and honey to the melon, squeeze the lemon juice, beat with a mixer until smooth. Step 4 Cut 1/3 lb. of melon that we set aside earlier into small cubes and add to the fruit mass. Step 5 Pour the resulting mass into a container and put it in the freezer for 8 hours. For the first 3 hours, stir the mixture every 30 minutes with a fork or whisk, then leave for 5 more hours. Step 6 Serve the sorbet in half an orange or in small bowls, garnished with fresh mint.
