Ingredients:
Medium eggplants – 6
Garlic – 2 cloves
Fresh cilantro – 4 sprigs
Walnuts – 1 cup
Cream cheese – 3.5 Oz
Pomegranate – 1
Lettuce (for decoration) – a few leaves
Salt, ground black pepper, and olive oil (for frying) – to taste
Step 1 Cut the eggplants lengthwise into 1/3” thick slices. Salt them and leave for 10 minutes. After that, rinse and dry the eggplants. Step 2 Heat some oil in a large frying pan on both sides. Don’t put eggplants slices on one another while frying. After frying, remove excess oil from the eggplants by placing them on a paper towel. Step 3 Make the filling of the eggplant rolls: Chop garlic, cilantro, and ½ tsp. of salt together in a blender. While blending the ingredient, gradually add nuts to the blender. Step 4 When blending is complete, mix the resulted mass with cream cheese. Add salt and ground black pepper to taste. Step 5 Spread the cream cheese mix over each eggplant slice, then roll each slice. Place lettuce leaves ona platter. Put the rolls on the lettuce leaves, decorate with pomegranate arils and pieces of cilantro, and serve. Bon appetit!
