Green salsa – ½ cup
Eggs – 2
Avocado (cut into slices or small pieces) – one half
Step 1 Boil the salsa in a small nonstick frying pan. Break the eggs into the boiling salsa. If desired, add the black beans. Cover the frying pan with a lid and cook the eggs until the whites set, but the yolks are still runny (about 5 minutes). Season the eggs with salt and pepper. Step 2 Warm the blue corn tortillas. Place the eggs and salsa on top of the heated tortillas. Garnish with avocado and cilantro. Serve and enjoy!
