Step 1 In a frying pan, heat olive oil over high heat, but not until it smokes. Season the beef with salt and pepper and fry on all sides until golden brown. Step 2 Preheat oven to 430 F. Put the frying pan in the oven and cook until the temperature inside the meat reaches 130 F (about 10-15 minutes). Then remove the meat from the oven and wrap in foil. Step 3 Leave a small amount of oil in the frying pan and add the finely chopped shallots. Sauté over medium heat until golden brown (2-3 minutes). Add wine and turn up heat. Cook for about 5 minutes, until the sauce starts to glaze. Remove from heat and add butter. Step 4 Cut the meat into slices, arrange on plates and top with the sauce. Bon Appetit!
