Ingredients:
Bell pepper – 3
Eggs – 3
Ham (cut into cubes) – 3 Oz
Grated low-sodium cheese (such as Emmental) – 1/3 cup
Step 1 Cut off the tops of the bell peppers and peel them of seeds and partitions. Cut the tops into small cubes. Step 2 Make the filling: In a bowl, combine chopped pepper tops and parsley, grated cheese, cut ham, diced onions, and salt. Stir well. Step 3 Preheat oven to 390 F. Fill the bell peppers with filling 2/3 of the total volume of peppers, then put them on a baking sheet and bake in the oven for about 20 minutes. Step 4 Remove the peppers from the oven and carefully break one egg into each pepper. Put the peppers in the oven again for 20 more minutes. Step 5 Take the peppers out of the oven, sprinkle with ground black pepper and serve. Enjoy!
