A light egg whites omelet rolled into a roulade with cheese and vegetable stuffing makes a delicious gourmet breakfast or lunch. Easy to make, tasty, and perfect for people with diabetes!
Ingredients:
Egg whites from 4 chicken eggs
Parsley, dill, spinach, and scallions – 2 bunches (combined)
Almond flour – 3 tbsp.
Water – 0.2 cups
Bell pepper – 1 (finely chopped two halves of different colors to enhance look)
Step 1 Place parsley, dill, spinach, and scallions in the food processor’s bowl and add 0.2 cup of water and blend until the mix gets smooth. Step 2 Blend in the egg whites from 4 eggs into the mix. Step 3 Blend in the flour, vegetable oil, salt and ground black pepper into the mix. Keep blending until the omelet dough is smooth. Step 4 Preheat oven to 430 F. Cover a baking sheet with wax paper and evenly pour the omelet dough on it. Bake for 5 minutes. The dough should just garb and get elastic. After that, take the omelet out of the over, immediately roll it up and let it cool. Step 5 Bake the chopped carrots and bell peppers in microwave for about 2 minutes, then let the vegetables cool. Step 6 Mash feta cheese and cream cheese together, add some green onions, salt and pepper. Mix with the baked vegetables. Step 7 Unfold the omelet and spread the cheese mix filling on it then roll the omelet tight again. Step 8 Wrap the egg roulade tightly with wax paper and cool the roll in the fridge. Step 9 Serve the roulade sliced into even pieces with herbs and fresh tomatoes. Enjoy!
