There are quite a few delicious diabetic-friendly dishes can be made from calamari. This interesting meat-free schnitzel is one of them.
Step 1 Grind the raw calamari meat in a meat grinder. Add the breadcrumbs, salt, and pepper and grind the calamari in a meat grinder again. Step 2 Heat some vegetable oil in a frying pan. Slightly fry the chopped onions. Step 3 Add the fried onion, chopped parsley, dill and green onions to the ground calamari. If the ground calamari meat is very thick, add some cold water. Step 4 Beat an egg in a bowl. Form wide schnitzels, less than 1/2" thick. Moisten them in a beaten egg and bread in breadcrumbs. Step 5 Fry the schnitzels on both sides for about 7 minutes. Garnish with slices of lemon and serve. The calamari schnitzels can be eaten both hot and cold, with raw or boiled vegetables or you can just wrap the schnitzels in a leaf of lettuce and have a green sandwich. Enjoy!
