This is a diabetes-friendly recipe for a Jubilee cake with cherry – a simple and delicious dessert that is easy to make, but hard not to ask for more. This cake is a great treat for your sweet tooth for any day of the week.
Ingredients:
Butter (chopped) – 1.5 tbsp.
Almond flour – 1 cup
Egg – 1
Milk – 0.5 cup
Raisins – 0.5 cup
Baking powder – 1.5 tsp.
Salt – 1 pinch
Sweetener – equivalent to 2 tbsp. of sugar
Cherries (pitted) – 0.5 cup
Hot milk for icing – 1 tbsp.
Powdered sweetener for icing – equivalent of 1 cup of icing sugar
Step 1 Preheat oven to 360 F, then grease and line a 10” x 6” x 4” loaf tin with baking paper. Step 2 Mix the almond flour with baking powder, then rub the chopped butter into the flour mixture. (The butter should be cold, right from the fridge.) Step 3 Add the sweetener and salt and mix well. Step 4 Beat the egg and mix it with the milk then add to the flour mixture. Stir well until the batter reaches smooth consistency. Use a whisk if necessary. Step 5 Add the raisins and cherries to the batter. Mix well. Step 6 Put the batter into the prepared loaf tin and place the tin in the preheated oven. Bake the cake for 30 minutes. Step 7 Take the loaf tin out of the oven and let the cake cool for about 10 minutes prior to removing the cake from the tin. Step 8 Now it’s time to do the icing and decoration for the cake. Combine the hot milk and powdered sweetener, mixing them to a smooth consistency. Pour the mixture over the cake once you remove it from the tin while the cake is still warm. Step 9 Decorate the cake with almonds and shredded coconut. Serve and enjoy!
