Step 1 Peel the fresh mango, cut out a pit, and cut the pulp into small cubes. Cover a plate with fresh lettuce leaves, and put the mango cubes on top of them. Step 2 Prepare the dressing: Beat the Dijon mustard in a small bowl with a fork, slowly pouring in the olive oil. Add honey to the mixture and then add the hot mustard. Stir well. Step 3 Heat some vegetable oil in a frying pan and quickly fry the chicken liver on all sides until a bright brown crust appears. Add salt and pepper. Step 4 Put the prepared pieces of liver on the plate covered with lettuce leaves and mango and generously pour over the salad with mustard-honey dressing. Step 5 If desired, sprinkle with freshly ground black pepper on each side of the salad. Bon Appetit!
